Almond Poppyseed Muffins

Ingredients 

1/2 cup white sugar

1/4 cup brown sugar

2 1/4 cups flour

1 Tbsp baking powder

1/2 tsp salt

2 large eggs

1 cup buttermilk

1/2 cup oil

3/4 tsp almond extract

1 Tbsp poppy seeds


Directions

Preheat oven to 375º F. 

In a large mixing bowl, whisk together all of the dry ingredients.

Add in the two eggs, and mix. Add the milk, mix well, and then add the oil. Mix in the 2 tsp almond extract and poppy seeds. Mix until batter forms but don't over-mix.

Prepare muffin pan with paper liners. 

Fill each between 1/2 and 3/4 of the way full.

Bake for 20-23 minutes until lightly golden brown.

Let cool.
