Creamy Fiesta Chicken
From a freezer meal prep night
Ingredients
2 lbs boneless, skinless chicken breasts
1 onion finely diced
15 oz frozen corn
15 oz canned black beans rinsed and drained
1 cup salsa
2 tablespoons lime juice
1 packet taco seasoning
1 packet dry ranch dressing mix
8 oz cream cheese
1 cup shredded pepper jack cheese
Optional toppings: guacamole, salsa, sour cream, cilantro, etc
Directions
Place chicken breasts in the bottom of the crock pot. Add chopped onion, corn, black beans, salsa, lime juice, taco seasoning, and dry ranch dressing mix.
Cook for 5-6 hours on low or 3-4 on high.
An hour before eating, shred the chicken and add the cream cheese and shredded cheese.
Use for tacos, burritos, nachos, salads, enchiladas, quesadillas, etc.
For Freezer Meal:
Place chicken, onion, corn, black beans, salsa, lime juice, taco seasoning, and ranch dressing mix into a gallon freezer bag. When ready to use, dump ingredients from bag into slow cooker and add 1/4 cup water or chicken broth in with frozen food. Cook for 6-7 hours on low or 3-4 on high.
An hour before eating, shred the chicken and add the cream cheese and shredded cheese.
