Crock Pot "Russian Rice"
My mom and dad used to make this all the time when we were at home. It's really called Italian Chicken and Rice but my sister, Mckell, decided to call it Russian Rice one day. It stuck.
Ingredients
2 cups water
2 cubes chicken bullion
1 packet Italian Seasoning
3-4 chicken breasts
8oz cream cheese
Serve over rice or noodles
Directions
In a crock pot add water, chicken bullion, Italian seasoning packet, and chicken. Cook on low for 6 hours or high for 3-4 hours. When the chicken is cooked, take chicken out and add brick of cream cheese to liquid. (I usually strain out all the chicken goop out of the liquid.) Melt the cream cheese in the broth and add shredded chicken back to the pot. Let sit in the crock pot for 15-20 minutes before serving over rice or noodles.
