Kasey's Key Lime Pie
Ingredients
Crust
1 1/2 Cups of graham cracker crumbs
1/2 cup of sweetened shredded coconut
1 egg + 1 yolk
1/4 cup sugar
6 tbsp butter melted
Key Lime Filling
1 cup heavy whipping cream
11 oz white chocolate chips
2 tbsp sour cream
2 tsp lime zest
1/3 cup key lime juice
8 oz cream cheese
Directions
Preheat oven to 350º.
To make the crust, mix together the graham cracker crumbs, eggs, coconut, and sugar in a medium bowl.
Pour in the melted butter and stir until thoroughly combined.
Press the mixture into the bottom and up the sides of a 9-inch pie plate.
Bake for 10 minutes. Let cool a little before placing into the refrigerator. Chill for 30 minutes before filling.
To make the filling, add the cream and white chocolate chips to a small saucepan over low heat. Cook over low heat, stirring frequently, until completely melted and smooth.
Remove from heat and stir in the sour cream, cream cheese, lime zest, and lime juice.
Chill mixture for 30 minutes then pour into crust.
Cover and refrigerate at least 8 hours or overnight before serving.
