Kasey's Pad Thai
Ingredients
2 chicken breasts
Pad Thai noodles
2 Tbsp Peanut Oil
Salt
Pepper
Garlic Powder
Onion Powder
Chicken Broth Powder
3 cloves of garlic
1 red bell pepper
6oz bean sprouts
1/2 Tsp red pepper flakes
1/4 cup chopped green onion
2 eggs
2 Tbsp pad thai sauce
1 Tsp fish sauce
1/4 cup soy sauce
3-4 Tbsp lime juice
3-4 Tbsp brown sugar
1/2 cup peanuts
1/2 Tbsp cilantro
Directions
Prep: Cut raw chicken into small pieces. Chop up the bell peppers, green onions, and cilantro. Scramble the eggs. Soak Pad Thai noodles in a bowl of water.
In a large skillet or a wok, cook the chicken over medium heat in the peanut oil. Season the chicken with salt, pepper, garlic salt, onion powder, and flavored chicken broth powder (I usually just eyeball it.)
Remove chicken and add more peanut oil to the pan and saute the pepper, green onions, red pepper flakes and garlic.
When the vegetables are soft, add the bean sprouts and cook till softened.
Push all the veggies up the sides of the wok or skillet and pour the scrambled eggs into the center and cook.
Add the chicken back into the pan and add the noodles and peanuts.
In a separate bowl, mix together the Pad Thai sauce, fish sauce, soy sauce, lime juice, and brown sugar.
Pour over everything and stir to combine. Let sit till the noodles are finished cooking (about 10 minutes).
Add chopped cilantro.
