Kasey's White Bean Chicken Chili

Ingredients


1 lb chicken breast (cooked and shredded)

4 tbsp butter

¼ cup diced onion

1 4.5oz can chopped green chiles

2 garlic cloves, finely minced

4 cups chicken broth

2 cans cannellini beans (drained)

1 can pinto beans (drained)

1 cup frozen corn

1.5 cup heavy whipping cream

4 oz cream cheese

2 tsp cumin

1 tsp oregano

¼ tsp cayenne (optional)

Salt and Pepper to taste

Top with:

Monterey jack cheese
Sour cream
Avocado
Green onion
Tortilla chips

Directions

*I prepare my chicken in a crock pot and shred before adding to soup*

In a large stock pot, melt the butter and add onion and green chilis. Stir until onion is translucent. Add in garlic and stir till fragrant.

Add the chicken broth and heat to a boil. Reduce heat to low and simmer.

Rinse the beans and add to soup along with shredded chicken and frozen corn.

Warm up the cream cheese in the microwave till you can stir it (~30 seconds). Add cream cheese and heavy whipping cream to soup.

Season with cumin, oregano, cayenne, salt, and pepper.

Let simmer for 10-15 minutes, stirring occasionally.

Top with monterey jack cheese, sour cream, avocado, green onions, and tortilla chips.
