Spinach Rice Puffs
I know what you're thinking... these look like little turds. You're not wrong. But they taste so good and I can eat the whole pan in one sitting.
Ingredients
1.5 cups cooked rice
Handful of spinach
1 tsp parsley
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1 tbsp vinegar
2 tbsp avocado oil
Water to to thin
Melted butter
Grated parmesan
Garlic salt
Place the cooked rice, spinach, parsley, garlic powder, onion powder, salt, vinegar, and oil in a blender or food processor. Blend until smooth. You may need to add some water to thin out the consistency but it should be pretty thick.
Transfer to a piping bag and pipe small 1" blobs onto a cookie sheet.
Bake at 425 for 15-20 minutes.
While they're still on the pan, brush on melted butter and sprinkle the grated parmesan and garlic salt over the top.
Place back into the oven for another 3-5 minutes till nice and crisp on the outside.
