Tropical Salad with Pina Colada Vinaigrette

Ingredients 

Dressing Ingredients:

1/2 Cup Sugar
1/3 Cup Pina Colada Mix
1/3 Cup Rice or Apple Cider Vinegar
1/2 Tsp Ginger
1 Tsp Dry Mustard
1/2 Tsp Salt
1 1/4 Cup Vegetable or Avocado Oil

Salad ingredients:
Lettuce - romaine and spring mix (or just chopped romaine)
Blueberries
Raspberries
Pineapple chunks
Mangoes diced
Toasted coconut
Macadamia nuts chopped

Directions

In a blender combine all the dressing ingredients, except the oil. Blend until light and frothy. Add oil in steady stream.
