Pot Roast
Ingredients
4-5 lbs chuck roast (if needed cut into 2 pieces that would fit in the pot)
1 small onion (diced)
2 stalks of celery (cut into large chunks)
8 cloves garlic (minced)
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon oregano
1 teaspoon paprika
1/4 teaspoon ground black pepper
1/4 teaspoon red pepper flakes
2 cups beef broth (low sodium)
1/4 cup soy sauce
2 tablespoons Worcestershire sauce
4 tablespoons butter (unsalted)
Bag of baby carrots
3-4 medium sized golden or red potatoes (chopped into 1" cubes)
Directions
Place everything in a crock pot except for the carrots and potatoes. Turn crock pot to low for 4 hours. Add in the potatoes and carrots and continue to cook for another 2-3 hours on low.
