Summer Rolls and Peanut Sauce
Ingredients
Vegetables
Baby spinach
Carrots
Cucumber
Bell Pepper
Green onions
Rice noodles
Rice paper sheets
Thai Chicken
2 breasts of chicken
3 cloves of garlic
5 Tbsp soy sauce
4 Tsp sesame oil
3 Tbsp vegetable oil
Note: I like to make my chicken in the crock pot and shred it.
Peanut Sauce
1/4 cup peanut butter
1 1/2 Tbsp soy sauce
1 Tbsp honey
Splash of lime juice
Water to thin
Directions
Prep: Chop carrots, cucumber and bell pepper into match sticks. Chop green onions.
Mix soy sauce, vegetable oil, sesame oil, and garlic in a skillet over medium heat. Add chicken to skillet and stir to combine.
Combine all the ingredients for the peanut sauce for dipping.
Dip the rice paper sheets in water for 15-30 seconds. Add ingredients inside and roll it up. Dip in the peanut sauce or in a sweet chili sauce.
