Southwest Chicken Wraps
Ingredients
6-7 crispy chicken strips/tenders, cooked according to package directions.
Flour tortillas
Romaine lettuce leaves
2 medium tomatoes, cut into slices
1 pkg. frozen corn
1 Tbsp. oil
1 can black beans, drained and rinsed
Green onions
1 cup shredded cheddar cheese
Taco Toppings : shredded lettuce, cheese, pico de gallo, chopped tomatoes, avocado slices, guacamole, lime, jalapenos, etc.
Southwest Dressing
1 1/2 cups mayonnaise
1/2 cup salsa
1/2 cup milk
3 Tbsp. taco seasoning
1 Tbsp. cumin
Directions
Preheat oven according to package directions or prepare in air fryer and bake chicken strips.
In a small mixing bowl add mayonnaise, milk, salsa, taco seasoning, and cumin. Mix well and set aside.
Add oil and corn into a small skillet and cook till warm. Add in black beans and green onions and continue to cook till corn is browned.
Warm a tortilla on a pan and assemble your chicken wraps by adding chicken, a couple Tbsp. of the southwest dressing, romaine lettuce, sliced tomatoes, black beans, corn, shredded cheese, avocado and any other toppings listed above.
Roll up tortilla tightly, cut in half and serve with a side of southwest dressing.
